Brazil discovers Greek spaghetti is a Mediterranean diet dream

A recipe for Greek spaghetti with meat sauce, designed for an Instant Pot, offers a way to prepare a Mediterranean-style meal at home. The dish is intended to serve five people.

The recipe comes from Kelly Jaggers’ book, The Everything Mediterranean Instant Pot Cookbook. It calls for ingredients such as spaghetti, olive oil, white onion, lean ground veal, white wine, tomato sauce, a cinnamon stick, bay leaves, and garlic.

The author recommends using Greek myzithra cheese for the topping, but notes that Parmesan cheese can be used as a substitute. Bay leaves are included to give the sauce a fresh, aromatic flavor.

To prepare the dish, the pasta is cooked first in the Instant Pot with water and a tablespoon of olive oil for four minutes under pressure. The pasta is then drained and set aside.

The sauce is made by sautéing the onion in the remaining oil, then browning the ground veal. Salt, pepper, wine, and tomato sauce are added and mixed well. The cinnamon stick, bay leaves, and garlic are stirred in before the pot is sealed and cooked for another five minutes under pressure. After cooking, the cinnamon stick and bay leaves are removed and discarded.

The finished pasta is placed in a large bowl, sprinkled with cheese, and topped with the meat sauce. The recipe suggests serving the dish immediately.

According to the nutritional information provided, each serving contains 550 calories, 22 grams of protein, 17 grams of fat, and 72 grams of carbohydrates. The recipe notes that using one pound of veal instead of half a pound, or choosing a high-protein pasta, can increase the protein content of the meal.
